Here are six vegan lentil soup recipes from around the web that I have made and can confirm are delicious!
Personally, I want to have my meals ready for NaNoWriMo November. With winter a’coming, I’ve once again started to bulk-freeze homemade soup. Who wants to cook when they get home from work on a cold winter’s night? Not me, that’s for sure. My favourite soup is lentil soup. It’s hearty, delicious, healthy, and so, so versatile. It’s also really quick to cook and can be made in big batches and frozen. With NaNoWriMo coming up in November and present-making in December, I don’t want to waste any of my precious free time cooking. I want a freezer full of yummy, nutritious food to give me energy. Soup is dead-easy to make, always freezes and reheats well, and there are so many different flavour combinations it’s impossible to get bored! Even if it is all I eat in November…
I am not vegan and have no plans to become vegan. But as I don’t eat meat and my other half is lactose intolerant, vegan recipes are always a safe bet for us. Here are six of my favourites, from around the web. I’ve made them all and, trust me, they’re delicious! So get cooking, folks.
